Copenhagen’s Noma will shut down for ten weeks next January so the entire staff can open a pop up version of the restaurant on the harbour in Sydney, Australia.
Noma, which has been voted the world’s best restaurant four times in the past five years, did something similar in January of this year, when they opened a popup restaurant atop a luxury hotel in Tokyo, Japan.
“Our restaurant Tokyo opened up a whole new world of tastes and culinary tradition for us,” chef René Redzepi wrote on Noma’s website. “We returned to Copenhagen more uplifted than ever and filled with energy and inspiration.”
An interesting blend
Redzepi wrote that he has always dreamed of travelling to Australia. The chef said that he has spent the past few weeks visiting the country and working on funding for the project.
The restaurant in Sydney will be located not far from Utzon’s world-famous Opera House.
“I have always been attracted by the tremendous diversity in Australia’s landscapes and ingredients, because you will not find anything like it anywhere else in the world,” said Redzepi. “Australia is strongly influenced by the traditions of its indigenous peoples and combines that with people from all over the world.It is the perfect place to learn.”
About 60 cooks, dishwashers and waiters will head to Sydney in January.
