Some might recoil at the thought of eating uncooked food that isn’t sashimi, but for health fanatics or those simply looking to introduce some extra freshness into their diet, raw food is the way to go. And with these gourmet picks, you won’t just be munching on carrot sticks!  

 

42°Raw 

At Copenhagen’s first raw food bar, there isn’t an oven or stove to be found in the entire establishment. The food is ‘cooked’ to a maximum of 42 degrees (hence the name) in one of the café’s many dehydrators, which help the resulting dishes retain their maximum nutrients and enzymes. Don’t miss this eatery’s milk and flour-free banana pancakes or sandwiches made with homemade gluten-free bread. All the dishes are also 100 percent vegan.

The Raw Tribe

Looking for healthy, organic, and vegan food that is uncooked? Look no further than The Raw Tribe. This trendy joint near Nørreport station offers everything from sandwiches and smoothies to their ever-popular rice paper rolls, filled with fresh vegetables, nut pate, cashew cream, and topped with sweet chilli sauce.

simpleRAW 

The creators of simpleRAW (who founded the eatery in 2010 in a Vesterbro apartment) believe that at its heart, food should be simple and with minimal processing, consisting purely of vegetables, fruits, seeds and grains. Therefore, the café’s offerings are completely preservative and additive-free and are made without dairy or gluten-containing products. Don’t miss their tapas lunch menu.

Raw Sum

While much of the raw food industry relies on vegan ingredients for obvious reasons, Østerbro’s Raw Sum has broken the mould and begun to incorporate meat, fish and seafood into their menu offerings, including sushi. Elsewhere, try their vegetable-based pizza slices, lasagnes and oriental noodles, or their freshly-made juices and smoothies. The cafe uses purely recycled products for their utensils and takeaway packaging.
